To Inject or Not To Inject

I’m not sure how many of you are familiar with injectable marinades but it’s a trend that’s been around for nearly a decade now.  The idea is, that instead of soaking your meat in a marinade for hours, you can use a hypodermic style needle to directly inject the marinade throughout your meat.  Saves time, effort, etc…supposedly.

I’ll be honest, I’ve tried this numerous times with numerous meats and flavors, and have yet to see any real benefit to it.  It seems that this shortcut method to marination is a waste of time and resources.  I’ve never found it to add much flavor to my food, maybe in certain bites, but not the overall product.

I prefer a dry rub when I don’t have time to properly marinate a piece of meat.  Call me old fashioned, but anything worth doing is worth doing right, not fast.  It seems as though the marinade doesn’t get into the whole thing when you’re injecting it into spots, and frankly, I’ve seen it running back out of the holes created by the needle while cooking it.  So there can’t be much staying in the meat.

Low and slow doesn’t only apply to COOKING your BBQ.  It encompasses everything about your process.  Take the time to marinate prior to the cook, prepare your seasonings and rubs before you need them, and don’t rush it.  There’s a reason that all fast food tastes the same, but no 2 barbecues ever taste the same.

BBQ Pit Boys - Get To Know Them

Folks, I’ve mentioned these guys quite a bit in the last few days and would like to try to do them some justice by explaining what they really do.  I don’t have any background on the group, where they’re from or specifically who they are, but that’s really not as important as you might think it is.

The BBQ Pit Boys, found at www.bbqpitboys.com , are BBQ Gurus of the highest order.  You may be a fan of Food Network and all their fancy schmancy techniques, flavors, herbs and vegetables you can only get if you know someone who knows someone, but come on…  Most of us don’t eat that way, we want food that’s not TOO difficult to fix up and is just lip smacking greatness on a plate.

And that’s what you get with the BBQ Pit Boys.  These fellas have been publishing videos online showing off recipes, techniques and ideas for a long time now.  I was lucky enough to discover them through YouTube, where you’ll find their entire library of videos under the name “BarbecueWeb”  And these guys deliver!  Simple, straight forward video and narraration makes it easy for even the most novice BBQ’er to cook up some super tasty meals on their backyard grill.

The BBQ Pit Boys give you recipes that are simple to follow, and wont’ break the bank.  With dishes such as BBQ Pulled Pork, Ribeye Steak and Bacon Wrapped Jalapeno Poppers, there’s no way you’ll ever go hungry again.  And with the wild popularity of their Pork Bomb Bacon Explosion, you know there’s a lot of people that agree with me here.

That’s right, the Pork Bomb Bacon Explosion.  3lbs of ground pork, stuffed with peppers, cheese, anything you want really, rolled tight and wrapped inside a mat of woven bacon.  Then they cook it low and slow on their Weber Kettle Grill, with all the heat off to one side, for that indirect cooking goodness that makes BBQ moist and tender.

You need to check these guys out if you’re serious about becoming a BBQ Pit Master.  And when you visit their site, if you give them a shoutout in your next video or send them a photo of you cooking up one of their incredible dishes, you’ll earn yourself a Pitmaster Certificate suitable for framing, just for being a good pal of theirs.

So stop on by their site, or their YouTube channel and give them a few thumbs up, and bring some napkins, because you’ll be drooling in your keyboard before it’s all said and done.  Oh, and let them know that BlackEyedPigz sent you by.  You won’t regret the trip!
